The Grands Causses, the Massif Central’s most southerly expression, are mainly harsh limestone plateau. The Rivers Tarn, Jonte and Dourbie have sliced deep gorges through the 5000-sq-km plateau, creating four causses: Sauveterre, Méjean, Noir and Larzac, each different in its delicate geological forms. All are eerie and empty except for the occasional shepherd and his flock – and all offer magnificent walking and mountain biking. Millau, at the heart of the park, is a good base for venturing into this wild area.
